This is not a comprehensive list of all the airline vendors.  There are numerous airlines flying through Hong Kong, so it is best to contact a travel agent and enquire about routes and airlines.

  Airline Information
  Hong Kong has one airport, Chek Lap Kok, located on an outer island.  It is possible to drive to the airport, or take the Airport Express to and from Central or Kowloon.
  
  Payment to Airline Vendors
  Usually you can pay in person using a local or foreign credit card.  It is also possible to pay over the phone, usually faxing in a copy of your credit card, both front and back. 
  
  Reserving airline tickets
  When you make a reservation, you do not have to pay for the ticket immediately.  In fact, you often don't have to pay until 2 weeks before you're due to leave, so it's possible to make numerous reservations and decide at a later date where you really want to go.  It is advisable to make Christmas reservations months in advance!
  
  Buying airline tickets
  Most airlines have active websites where you can purchase your tickets.  It's also possible to contact a travel agent who will help you, or contact the airlines directly if you know what ticket you'd like to purchase. 
  I do almost all of my booking through a travel agent.  
  
  E-tickets are not very common in Hong Kong
