How to Get Around the Lack of Ingredients

Ways and means to get over the occasional obstacles of daily life in the kitchen.

Are you missing ... ?

Baking powder (1 teaspoon) you can substitute it with 1/2 teaspoon cream of tartar plus 1/4 teaspoon baking soda

Bread crumbs (fine dry, 1/4 cup) you can substitute it with any of the following:
-
3/4 cup soft bread crumbs
- 1/4 cup cracker crumbs
- 1/4 cup cornflake crumbs

Buttermilk (1 cup) you can substitute it with1 tablespoon lemon juice or vinegar plus enough milk to make 1 cup (let stand 5 min before using) or 1 cup of plain yoghurt

Cajun spice (1 tablespoon) you can substitute it with 1/2 teaspoon white pepper, 1/2 teaspoon garlic , 1/2 
teaspoon onion powder, 1/2 teaspoon ground red pepper, 1/2 teaspoon paprika,  and 1/2 teaspoon black pepper   

Cornstarch (1 tablespoon) for thickening you can substitute it with 2 tablespoons all-purpose flour

Corn syrup (1 cup)  you can substitute it with 1 cup granulated sugar plus 1/4 cup water

Egg (1 whole) you can substitute it with 2 egg whites; 2 egg yolks; or 1/4 cup frozen egg product, thawed (you still got to have eggs!)

Flour, for cake (1 cup)you can substitute it with 1 cup minus 2 tabelspoons all-purpose flour

Flour, self-rising (1 cup) you can substitute it with1 cup all-purpose flour plus 1 teaspoon baking powder, 1/2 teaspoon salt and 1/4 teaspoon baking soda

Garlic (1 clove) you can substitute it with 1/2 teaspoon bottled minced garlic or 1/8 teaspoon garlic powder

Half-and-half or light cream  you can substitute it with 1 tablespoon melted butter (or margarine) plus enough whole milk to make 1 cup

Honey (1 cup) you can substitute it with 1 and 1/4 cups granulated sugar plus 1/4 cup water

Lemon juice (1 teaspoon)you can substitute it with 1/2 teaspoon vinegar

Margarine (1 cup) you can substitute it 1 cup butter (and viceversa!) or 1 cup shortening  plus 1/4 teaspoon of salt, if desired

Milk, whole (1 cup) you can substitute it with one of the following:
-
1/2 cup evaporated milk  plus 1/2 cup water
- 1 cup water plus 1/3 cup nonfat dry milk powder (comes handy in countries like Nigeria where finding fresh milk is difficult and relying on milkpowder is essential)

Molasses (1 cup)you can substitute it with 1 cup honey

Poultry seasoning (1 teaspoon) you can substitute it with 3/4 teaspoon dried sage, crushed, plus 1/4 teaspoon dried thyme or marjoram, crushed

Pumpkin pie spice (1 teaspoon)you can substitute it with 1/2 teaspoon ground cinnamon plus 1/4 spoon ground ginger, 1/4 teaspoon all spice, 1/8 teaspoon nutmeg

Ricotta you can obtain it by bringing to boil 1 liter of whole milk; when the first boiling bubbles appear pour a juice of half a lemon and stir gently to make the milk curl, but do not cook! Then sieve it through a cheese cloth to separate the "ricotta" from the serum. In Brazil they use the serum to make a sweet dessert called "dulce de leche".

Sour cream, dairy (1 cup) you can substitute it with 1 cup plain yoghurt

Yeast, active dry (1 package) you can substitute it with1 cake compressed yeast
